BRUT DA UVE PINOT Quality Sparkling wine
Production area:
Pinot blanc, Pinot noir and Pinot gris are very ancient
vines, as their origins date back to the Roman age.
Very noble vines, they are widely planted in France and
in Italy, especially in the regions of Trentino Alto Adige,
Veneto, Friuli, Lombardy and Piedmont.
Vinification system:
White vinification. First fermentation occurs at controlled
temperature, after selected yeasts are added. The
wine becomes bubbly inside low-temperature pressure
tanks. After fermentation, spumante wine remains in
contact with the yeasts for 6 months at least, in order to
favour the dissolution into the wine of special substances
that result from yeast lysis. This process confers the
wine its distinguishing characteristics.
