Chardonnay is a vine widely cultivated in the Champagne and Burgundy areas of France. In Italy it is found in Lombardy, especially in the Franciacorta areas,Trentino Alto Adige, Veneto and Friuli. Because of its acidity, Chardonnay is ideal for fresh, light, sparkling wine. This wine has formed part of our production since 2001.
Flat, of alluvial origin, predominantly clay, tending to lime.
Cultivation is on spurred cordon and the number of vines per hectare is approximately 4000.
Pressed de-stalked grapes, must held in contact with skins for approx. 12 hours, then pressed softly. The resulting must is fermented partly in Allier barriques, partly in steel tanks, then at the end of the alcoholic fermentation held in contact with yeast for a few months. Once the wine is bottled, it is left to mature for a few months before being placed on the market.
