Pinot grigio derives from gem mutation of Pinot noir, of which it has nearly all the characteristics, apart from the colour. It appears that Pinot was first imported into Italy by General Emilio di Sambuy, who brought it from Burgundy to his farm in Lesegno, in the province of Cuneo. In Italy Pinot grigio is now widespread in Trentino Alto Adige, Friuli, Lombardy and Piedmont. This wine has formed part of our production since 2001.
Flat, of alluvial origin, predominantly clay, tending to lime.
Cultivation is on spurred cordon and the number of vines per hectare is approximately 5000.
pressed de-stalked grapes, must held in contact with skins for approx. 12 hours, then pressed softly. The resulting must is fermented partly in Allier barriques, partly in steel tanks, then at the end of the alcoholic fermentation held in contact with yeast for a few months. Once the wine is bottled, it is left to mature for a few months before being placed on the market.
